NEED PAMPERING: Ally’s Perfect Potato & Bacon Salad

To be cooked and enjoyed when you’re in the company of your best girlfriends (in my case, my beautiful younger sisters Ally & Joya) and you’re wanting to have a girly pamper session while eating something scrummy…
BODY FOOD
Potatoes are high in vitamin C, vitamin B, potassium, magnesium, phosphorus and zinc, which are all very good for the skin when consumed.  Even when just applied topically, raw potato pulp (with a bit of honey if you want) make an awesome face pack to get rid of pimples and spots, while softening and cleaning the skin!  It’s so good for the skin in fact, that raw potato pulp is a quick emergency relief for burns.  Who knew something so yummy could also be so good for ya?! (and fun on a girly pamper night…)

INGREDIENTS
(serves 4)
  • Baby or Perla potatoes (700g)
  • Gherkins (6 medium sized, chopped thinly)
    • Reserve approx 1 tbsp – 2 tbsp of the juice too!
  • Streaky bacon (200g)
  • Wholegrain mustard (2 tbsp)
  • Heinz original mayonnaise (200g)
  • Chives (1 bunch, chopped)
  • Black pepper
  • Salt
  • Parsley
COOKING INSTRUCTIONS
  • In a pot, boil the potatoes with salt until tender. 
    • (Take them out when you think they’re almost but not yet done, because they keep cooking for a while after you take them off the heat).
  • Cut the potatoes in half, or into 3 pieces if the they’re quite big and put them in a large bowl.
  • Cook the bacon until they extra crispy, and then drain on paper towels before chopping them into small pieces.
  • Add the bacon to the bowl, along with the chopped gherkins, reserved gherkin juice, chopped chives, mustard, and mayonnaise.  Season with salt and pepper.
  • Toss around altogether, and then serve with a bit of parsley on the top to garnish!  Sooooo simple, but incredibly flavoursome! 🙂
