Feeling HOMESICK kinda sucks.. but it does seem to be one of those emotions that are naturally part of the human condition. I mean, home IS where the heart is right? So it makes sense we miss home when we go away. But never fear – theres a meal for that! When you’re feeling homesick, I swear there is nothing better than having these Vietnamese-Inspired Kim Family “do-it-yourself” Wraps with your good friends! Watch and find out how and why 🙂

Vietnamese-Inspired Kim Family Wraps

Get some Vietnamese Wraps (dunked in warm water to soften before wrapping) and then add:

  • Avocado
  • Pineapple (from a can is perfect)
  • Any other veges that you want to eat (capsicum, snow pea shoots, alfalfa, carrots, cabbage, lettuce, mushrooms, red onions, bamboo shoots, cucumber, etc etc)
  • Any other fruits that you want to eat (apple, nashi pear, dragon fruit, papaya, etc etc)
  • Prawns (sauteed in garlic butter)
  • Scallops (sauteed in butter, salt, and pepper)
  • Beef strips (stir fried with soy sauce, crushed garlic, brown sugar, and honey)
  • And any other yummy fillings you like and would like to add (e.g. tofu, egg, chicken, etc etc)

SAUCE (adjust to taste!)

  • Thai Sweet Chilli Sauce
  • Lime juice
  • Pineapple juice (left over from can)
  • Fresh chilli
  • Fish sauce

    Oh, I’ve seen those mushrooms and I was intrigued but didn’t know how to use them! What a great idea to use them in wraps! Do you keep the prawns & scallions broth to use for something else by the way?

      Those enoki mushrooms are AMAZING – they’re probably my favourite mushrooms. They’re great in wraps but I also think they’re fantastic in any kind of soup or broth too. Thank you so much for watching and commenting 🙂 It means a lot to me! And no, I didn’t keep the prawns and scallops broth, but I reckon if you wanted to include some harder veges like broccolli into the wraps as well – it would be a great broth to do some quick poaching or blanching! What you reckon?
